U skladu s procesima prilagodbe
statistike stočarstva i stočne proizvodnje europskim statističkim
standardima (Council Directive 96/16/EC i Commission Decision 97/80/EC),
u 2010. uvedeno je godišnje publiciranje podataka o proizvodnji mlijeka i
mliječnih proizvoda.

In line with the
processes of the harmonisation of the livestock production statistics with
the European standards (Council Directive 96/16/EC and Commission Decision
97/80/EC), the annual issue of data on milk and dairy products was
introduced in 2010.
|

Prikupljeno kravlje mlijeko u
2009. u odnosu na 2008. bilježi porast za 2,7% kao i kozje mlijeko, koje je
u porastu za 5,2%. Istodobno prikupljeno ovčje mlijeko bilježi lagani pad
za 0,1%.
|

In 2009, as compared to 2008, the collected cows’ milk increased
by 2.7% and goats’ milk by 5.2%, while the collected ewes’ milk slightly
decreased, by 0.1%.
|

|
|
|
Količina cjelovitog mlijeka koju
uvoze mljekare u 2009. u odnosu na 2008. povećana je za 8,5%. Ostali podaci
o uvozu i izvozu sirovina koji obavljaju mljekare zaštićeni su u skladu sa
Zakonom u službenoj statistici (NN, br. 103/03. i 75/09).

The import of whole milk by dairymen increased in 2009, as
compared to 2008, by 8.5%. Other data on the import and export of raw
materials by dairies are protected in line with the Official Statistics Act
(NN, Nos 103/03 and 75/09).

|
|
Što se tiče proizvodnje svježih
mliječnih proizvoda, u usporedbi s prošlom godinom bilježi se pad
proizvodnje konzumnog mlijeka za 3,9%, fermentiranih proizvoda za 5,0% te
ostalih svježih proizvoda za 0,9%. Istodobno se bilježi porast proizvodnje
mlaćenice za 44,8%, vrhnja za 1,7% te napitaka s mliječnom bazom za 64,0%.

Regarding fresh milk products, as compared to 2008, the
production of drinking milk decreased by 3.9%, of fermented products by
5.0% and other fresh milk products by 0.9%. At the same time, the
production of buttermilk increased by 44.8%, of cream by 1.7% and of
milk-based products by 64.0%.

Povećanje proizvodnje maslaca i
ostalih proizvoda od žutih masnoća iznosi 13,2% u odnosu na 2008. Ukupna
proizvodnja sira u 2009. smanjena je za gotovo sve vrste sireva. Tako se za
proizvodnju kravljeg sira bilježi smanjenje od 3,1%, dok se za ostale vrste
sireva bilježe i veća postotna smanjenja. Jedino povećanje proizvodnje
bilježi se kod proizvodnje ostalih sireva (23,6%), srednje tvrdog sira (5,5%)
te prerađenog sira (2,2%).

The increase of butter and other yellow fat dairy products was
13.2%, as compared to 2008. In 2009, the total cheese production of almost
all varieties of cheese decreased. Thus, the production of cows’ cheese
decreased by 3.1%, while for other varieties of cheese even greater
decreases were recorded. The only increase was recorded in the production
of other cheese (23.6%), medium-soft cheese (5.5%) and processed cheese
(2.2%).

Sadržaj mliječne masti kod
prikupljenoga kravljeg mlijeka bilježi porast za 3,1% te kod kozjeg mlijeka
za 7,2%, dok je količina mliječne masti za ovčje mlijeko ostala na istoj
razini kao i prethodne godine.

The milk fat content in cows’ milk collected increased by 3.1% and
in goats’ milk collected by 7.2%, while the milk fat content in ewes’ milk
remained at the last year’s level.
|

U pogledu pojedinačnih mliječnih
proizvoda, količina mliječne masti kod konzumnog mlijeka manja je za 3,8%,
kod fermentiranih proizvoda za 3,5% te kod ostalih proizvoda od žutih
masnoća za 4,6%. Za ostale proizvode bilježi se povećanje sadržaja mliječne
masti.

Regarding individual dairy products, the milk fat content in
drinking milk decreased by 3.8%, in fermented products by 3.5% and in other
yellow fat dairy products by 4.6%. In other products, there was an increase
in the milk fat content recorded.

Sadržaj proteina kravljeg mlijeka
u glavnim mliječnim proizvodima u padu je kod konzumnog mlijeka (za 2,9%)
te kod kravljeg sira (za 2,7%). Kod svih ostalih proizvoda bilježi se
povećanje sadržaja proteina koji je najveći kod mlaćenice i iznosi 56,7%.

The milk protein content in main dairy products decreased in
drinking milk by 2.9% and in cows’ cheese 2.7%. In the rest of main dairy
products there was an increase recorded and the largest one was shown in buttermilk
(56.7%).

|
Podaci o godišnjoj proizvodnji mlijeka i
mliječnih proizvoda preuzimaju se od Hrvatske poljoprivredne agencije –
Središnjeg laboratorija za kontrolu mlijeka (SLKM). Na taj se način
prikupljaju podaci o količini prikupljenoga kravljeg, ovčjeg i kozjeg
mlijeka, sadržaju mliječne masti i proteina, proizvodnji mliječnih
proizvoda te vanjskoj trgovini mljekara mlijekom i proizvodima.

Data on the annual
production of milk and dairy products are taken over from the Croatian
Agricultural Agency – the Central Laboratory for Milk Control (SLKM). The
data collected that way refer to the quantity of cows’, ewes’ and goats’
milk collected, milk fat and protein contents, the production of dairy
products from cows’ milk and the foreign dairies’ trade in milk and dairy
products.

Prikupljene podatke SLKM obrađuje i prosljeđuje
DZS-u prema unaprijed dogovorenim terminima i obliku prilagođenom za
daljnju obradu u DZS-u.

The Laboratory
processes the collected data and submits them, according to previously
defined deadlines and in suitable form, to the Central Bureau of Statistics
for further processing.

U RH djeluje četrdesetak mljekara za koje SLKM
vrši analizu otkupljenog mlijeka i od kojih prikuplja podatke o
proizvodnji. Obuhvaćene su industrijske i registrirane male mljekare.

There are about forty
dairies operating in the Republic of Croatia for which the SLKM makes
analysis of purchased milk and from which it collects data on the production.
The coverage includes industrial and registered small dairies.
|

|
Za potrebe ispunjavanja zatvarajućeg mjerila za
poglavlje 18 – Statistika, prikupljeni su podaci o proizvodnji mlijeka i
mliječnih proizvoda i za prethodna razdoblja. Iz tog razloga raspoloživi su
usporedni podaci.

For the purposes of
fulfilling the closing measure for Chapter 18 – Statistics, data on the
milk and dairy products, were collected for previous periods as well.
Therefore, comparative data are also available.

Mlijeko za piće obuhvaća sirovo mlijeko, neobrano, djelomično
obrano i obrano bez sadržaja aditiva.

Drinking milk comprises row milk,
whole milk, skimmed milk, semi-skimmed milk and skimmed milk containing no
additives.
|
|
|
|
|
|
Sirovo mlijeko obuhvaća mlijeko koje nije podvrgnuto bilo kojem
postupku zagrijavanja iznad 40°C.
|
|
Raw milk comprises milk which
has not been heated beyond 40°C or undergone any treatment that has an equivalent effect.
|
|
|
|
|
|
Neobrano mlijeko obuhvaća mlijeko sa sadržajem mliječne masti
≥3,5%, podvrgnuto toplinskom tretmanu.

|
Whole milk comprises milk with
