U drugom tromjesečju 2010. ostvarena vrijednost prometa u ugostiteljstvu iznosila je 4,0 milijarde kuna, a to je nominalno manje za 3,5% nego u istom razdoblju 2009.

 

The realised turnover value in the hotel and restaurant activity in the second quarter of 2010 amounted to 4.0 billion kuna, which means that it was nominally by 3.5% lower than in the same period of 2009.

 

 

 

Za isto razdoblje cijene ugostiteljskih usluga porasle su za 1,7%, što znači da je promet u ugostiteljstvu za to razdoblje realno pao za 5,1%.

 

In the same period, the prices of hotel and restaurant services increased by 1.7%. Therefore, the turnover in the hotel and restaurant activity really decreased by 5.1%.

 

 

 

Promet od 4,0 milijarde kuna ostvaren je u 2 248 pravnih osoba i 13 038 obrtnika. Od toga su 2,9 milijardi kuna ostvarile pravne osobe (73,0%) i 1,1 milijardu kuna obrtnici (27,0%). Od ukupno ostvarenog prometa, 21,6% ostvareno je od usluga pića, 36,4% od usluga hrane i napitaka, 37,7% od usluga smještaja i 4,3% od ostalih usluga.

 

The turnover of 4.0 billion kuna was realised in 2 248 legal entities and by 13 038 tradesmen. Out of that, 2.9 billion kuna was generated by legal entities (73.0%) and 1.1 billion kuna by tradesmen (27.0%). Out of the total generated turnover, 21.6% were generated by beverage services, 36.4% by food and beverage services, 37.7% by accommodation services and 4.3% of other services.

 

 

 

U ugostiteljstvu je bilo ukupno 86 099 zaposlenih, od čega u djelatnosti smještaja 38 003 (44,5%), a u djelatnosti pripreme i usluživanja hrane i pića 47 475 (55,5%).

 

The total number of persons in employment in hotels and restaurants amounted to 86 099, out of which 38 003 (44.5%) were employed in accommodation activities and 47 475 (55.5%) in food and beverage service activities.

 

 

 

Ukupan promet od ugostiteljske djelatnosti za razdoblje od siječnja do lipnja 2010. iznosio je 5,8 milijardi kuna, što je za 6,1% manje nego u istom razdoblju prošle godine.

 

The total turnover of the hotel and restaurant activity for the period from January to June 2010 amounted to 5.8 billion kuna, which was by 6.1% less than in the same period last year.

Izvori podataka jesu redovita statistička istraživanja Tromjesečni izvještaj ugostiteljstva za pravne osobe (UG-11) i Tromjesečni izvještaj ugostiteljstva za obrtnike (UG-11/OBRT).

 

The sources of data on hotel and restaurant activity are regular statistical reports: the Quarterly Report on Hotel and Restaurant Activity for Legal Entities (UG-11 form) and the Quarterly Report on Hotel and Restaurant Activity for Tradesmen (UG-11/OBRT form).

 

 

 

Istraživanja se provode izvještajnom metodom. Tromjesečni izvještaj za pravne osobe obuhvaća sva poduzeća/trgovačka društva i njihove dijelove koji obavljaju ugostiteljsku djelatnost. Tromjesečni izvještaj ugostiteljstva za obrtnike obuhvaća fizičke osobe (obrtnike).

 

The reporting method is used in conveying the surveys. The Quarterly Report for Legal Entities comprises all enterprises/trade companies and their parts that are engaged in the hotel and restaurant activity. The Quarterly Report on Hotel and Restaurant Activity for Tradesmen comprises natural persons (tradesmen).

 

 

 

Istraživanje Tromjesečni izvještaj ugostiteljstva za obrtnike provodi se metodom uzorka. Na osnovi rezultata dobivenih uzorkom ocjenjuje se cijeli skup.

 

The sampling method is used in conveying the Quarterly Report for Tradesmen survey. The results obtained through this report serve as a base for estimation of the whole group.

 

 

 

Metodologija se temelji na Eurostatovoj publikaciji Council Regulation (EC) Concerning Short-Term Statistics, 1998.

Podaci iz obrasca za svakog obrtnika odnose se na sve djelatnosti obrta (glavne i ostale, sporedne djelatnosti koje obrt eventualno obavlja).

 

Data on all tradesmen refer to all activities, both principal and auxiliary ones, possibly performed by tradesmen.

Tromjesečnim izvještajem ugostiteljstva (UG-11) obuhvaćene su sve pravne osobe, tj. poduzeća/trgovačka društva i dijelovi poduzeća/trgovačkih društava koji obavljaju ugostiteljsku djelatnost. Izvještajne jedinice za ovo istraživanje čine ugostiteljski poslovni subjekti (u državnom, privatnom, zadružnom, mješovitom vlasništvu i bez vlasništva; dijelovi neugostiteljskih poslovnih subjekata (ustanova, zadruga, klubova i sl.); osnivači odmarališta za djecu i mladež (Crveni križ, tijela za socijalnu skrb, škole, učeničke i studentske organizacije i dr.); organizacije zdravstvene zaštite (šifra djelatnosti 86.1 prema NKD-u 2007.) za svoje objekte u kojima pacijenti borave radi medicinske rehabilitacije, uporabe ponajprije prirodnih činilaca (voda, zrak, nadmorska visina i dr.) i druge organizacije koje se bave zdravstveno-rekreativnim turizmom (osobe same snose naknadu za taj boravak); organizacije koje su osnovale planinarske domove ili vode brigu i nadzor nad njima; poslovni subjekt željezničkog prometa (spavaći i kušet-vagoni); poslovni subjekti riječkog i pomorskog prometa (samo za redovite linije); poslovni subjekti u čijim objektima borave učenici škole u prirodi.

 

The Quarterly Report on Hotel and Restaurant Activity  (UG-11 form) cover all legal entities (enterprises/trade companies) and parts thereof that are engaged in the hotel and restaurant activity. Reporting units for this survey were hotel and restaurant business entities (state-owned, privately owned, cooperatively owned, in mixed ownership and in non-existing ownership; parts of business entities not engaged in hotel and restaurant activities (institutions, foundations, clubs etc.); founders of vacation facilities for children and youths (Red Cross, social care centres, schools, pupil and student organisations etc.); health care organisations, (code 86.1 according to the NKD 2007.) referring to their facilities offering medical rehabilitation services and advantages of natural factors (water, air, altitude etc.), as well as other organisations engaged in health and re-creative tourism (users are charged for services); organisations that founded, or take care of, mountain lodges; business entities engaged in transport (sleeping cars and couchettes); business entities in river and maritime traffic (only regular lines), business entities offering facilities for school children’s outdoor sojourns.

 

 

 

Adresar izvještajnih jedinica oblikovan je na bazi registra poslovnih subjekata. Svake godine ažurira se prema podacima Fine (godišnja prijava poreza na dobit, zadnje stanje 2008.).

 

The Address Book of Reporting Units has been formed on the basis of the Register of Business Entities. It is updated every year according to the Fina’s data (annual report on income tax, the most recent situation in 2007).

 

 

 

Od 2009. u primjeni je nova klasifikacija djelatnosti (NKD 2007.). Izmjena klasifikacije i kontinuirano ažuriranje Statističkoga poslovnog registra utječu na usporedivost podataka s prijašnjim razdobljima.

 

Since 2009, a new classification of activities (NKD 2007.) has been in use. This change in the classification as well as continuous updating of the Statistical Business Register affect the comparability of data with previous periods.

 

 

 

Tromjesečnim izvještajem ugostiteljstva za obrtnike (UG-11/OBRT) obuhvaćeni su obrtnici izabrani metodom slučajnog uzorka koji su prema pretežnoj djelatnosti registrirani u području I NKD-a 2007.

 

The Quarterly Report on Hotel and Restaurant for Tradesmen (UG-11/OBRT form) include tradesmen selected by a random sample method, registered by their prevailing activity into section I of the NKD 2007.

 

 

 

Stratifikacija uzorka izvršena je na temelju pretežne djelatnosti obrta prema NKD-u 2007. Okvir za izbor uzorka jest datoteka obveznika poreza na dohodak Porezne uprave Ministarstva financija.

 

Sample stratification was based on the prevailing activity of the tradesmen according to the NKD 2007. The database of income tax payers of the Tax Administration Office of the Ministry of Finance served as a sample framework.

 

 

 

Okvir uzorka sastoji se od svih obrtnika koji su registirani u području I NKD-a 2007. Obrtnici koji obavljaju ugostiteljsku djelatnost, ali su prema pretežnoj djelatnosti registrirani u ostalim djelatnostima, nisu u okviru uzorka pa nisu uzeti u okvir u ocjeni cijelog skupa.

 

Tradesmen who perform a hotel and restaurant activity, but are registered in other sections of the NKD 2007. by their prevailing activity, are excluded from the framework and, therefore, they were not taken into account when the whole group was estimated.

 

 

 

Svi podaci dobiveni uzorkom pokazuju određeni stupanj nepouzdanosti. Uzoračka pogreška iskazana je u tablici 4. Osim uzoračke pogreške, na rezultate utječe i neuzoračka pogreška, koja nastaje zbog zastarjelosti okvira i njegovih pogrešaka, pogrešaka u podacima koje dostavljaju izvještajne jedinice, pogrešaka nastalih pri obradi podataka i računanju procjena.

 

All data based on sample methods show a certain degree of unreliability. A sampling error is shown in table 4. Apart from the sampling error, data are influenced by non-sampling error due to obsolete frameworks and its errors, errors in data reporting as well as errors occurring during data editing and estimation process.

 

 

 

Višegodišnje serije prometa od ugostiteljstva, kao i desezonirane serije, objavljuju se u Mjesečnom statističkom izvješću, u kojem se objavljuju i eventualno revidirani podaci za ranija razdoblja.

 

Multi-year series of hotel and restaurant activity and seasonally adjusted series are issued in the Monthly Statistical Report as well as conceivably revised data for previous periods.

 

 

 

Definicije vezane uz ugostiteljska poduzeća

 

Definitions regarding hotel and restaurant enterprises

 

 

 

Ugostiteljska djelatnost jest djelatnost pripremanja hrane i pružanja usluga prehrane, pripremanja i usluživanja pića i napitaka i pružanja smještajnih usluga (Zakon o ugostiteljskoj djelatnosti, NN, br. 138/06.). Prema NKD-u 2007., to su sve djelatnosti iz područja I Djelatnosti pružanja smještaja te pripreme i usluživanja hrane i pića (osim djelatnosti studentskih i učeničkih domova i ostaloga neturističkog smještaja koji se također razvrstavaju u područje I). U skladu s definicijom ugostiteljske djelatnosti, obuhvaćene su i djelatnosti pružanja smještajnih usluga turistima koje se obavljaju u kupališnim i klimatskim lječilištima (razvrstana u razred 86.1 prema NKD-u 2007.).

 

Hotel and restaurant activity includes food preparation and other food provision services, preparation and serving of beverages and accommodation services (the Law on Hotel and Restaurant Activity, NN, No.138/06). According to the NKD 2007., this covers section I Accommodation and food service activities (excluding students’ and pupils’ boarding homes and other non-tourist accommodations, which are also classified into section I). According to the definition of the hotel and restaurant activity, included are also accommodation services to tourists in spas and health establishments (classified under class 86.1 of the NKD 2007.).

 

 

 

Ugostiteljskim objektom smatra se ugostiteljska poslovna jedinica koja u poslovnom, građevinskom i funkcionalnom pogledu čini cjelinu ili u okviru šire građevinske cjeline ima izdvojeni prostor i potrebnu funkcionalnost.

 

Hotel and restaurant facility is a business unit in hotel and restaurant activity that forms a whole in the business, construction and functional sense or functions like one within a bigger construction unit.

 

 

 

Prema Pravilniku o razvrstavanju, minimalnim uvjetima i kategorizaciji ugostiteljskih objekata (NN, 88/07., 05/08., 49/08., 58/08., 75/08. i 45/09.) ugostiteljski objekti klasificiraju se u odgovarajuću vrstu, a određene vrste ugostiteljskih objekata u odgovarajuću kategoriju

 

According to the Regulation on Classification, Minimal Conditions and Categorisation of Hotel and Restaurant Facilities (NN, Nos. 88/07, 05/08, 49/08, 58/08, 75/08 and 45/09), hotel and restaurant facilities are first classified into appropriate types and individual types are further classified into appropriate categories.

According to the methodology, the number of persons in employment comprises all persons who actually work, including owners.

 

 

 

Zaposleni su sve osobe zaposlene na neodređeno i određeno vrijeme u ugostiteljskim objektima te zaposleni u upravi poslovnog subjekta i pomoćnim službama.

 

Persons in employment include all persons employed for fixed or specified period of time in hotel and restaurant facilities as well as persons employed in administration or supporting services.

 

 

 

Promet u ugostiteljstvu obuhvaća vrijednost izvršenih ugostiteljskih usluga – posluživanja hranom i pićima, usluga smještaja i ostalih usluga koje se obično pružaju uz osnovne ugostiteljske usluge bez obzira na to jesu li naplaćene. U promet je uključen porez na dodanu vrijednost.

 

Turnover in hotel and restaurant activity includes the value of provided goods and non-goods services – food and drinks, accommodation and other services accompanying basic hotel and restaurant services, irrespective of whether they are charged or not. Turnover includes the value added tax.

Ukupan promet obuhvaća vrijednost svih prodanih roba i usluga na tržištu tijekom tromjesečja bez obzira na to jesu li naplaćene, i to s porezom na dodanu vrijednost. Iskazuje se promet svih djelatnosti koje obrt obavlja (glavnih, pretežnih, ali i mogućih, ostalih djelatnosti obrta).

 

Total turnover includes the value of all sold goods and services, irrespective of whether they are charged or not. Turnover includes the value added tax. The turnover of all activities done by a particular craft (including main, prevailing and other activities crafts are engaged in).

 

 

 

Porez na dodanu vrijednost obuhvaća porez na dodanu vrijednost obračunan kupcu.

 

Value added tax includes a value added tax paid by a customer.

 

 

 

Broj zaposlenih prema metodologiji obuhvaća sve osobe koje stvarno rade u obrtu, uključujući vlasnike koji rade. Izvještajne jedinice često odstupaju od ovog načela pa ne iskazuju vlasnike pod brojem zaposlenih.

 

Number of persons in employment, according to the methodology, covers all persons who actually work in a craft, including owners who work. While reporting on the number of persons in employment, reporting units often do not stick to this principle and omit owners.

 

 

 

Struktura prometa od ugostiteljstva po vrstama usluga odnosi se na strukturu u postotku za ostvareni promet od ugostiteljskih djelatnosti prema vrstama usluga, i to od alkoholnih i bezalkoholnih pića, hrane i napitaka, smještajnih usluga za turiste i ostaloga ugostiteljskog prometa.

 

Structure of hotel and restaurant turnover, by types of services, refers to the structure expressed in percentage for the turnover realised from hotel and restaurant activities, by the following types of services: alcoholic and non-alcoholic beverages, food and drinks, accommodation services to tourists and other hotel and restaurant turnover.
