SLAUGHTERING OF LIVESTOCK AND POULTRY, 2010

 

 

Prema raspoloživim podacima ukupnoga klanja u klaonicama, u 2010. bilježi se povećanje klanja goveda za 4% u broju i 12% u težini. Klanje svinja bilježi rast u približno istome postotnom iznosu (u broju 10% i težini 11%) u usporedbi s istim razdobljem prošle godine.

 

According to available data on the total slaughter in slaughterhouses, there was an increase in 2010 of cattle slaughtering, 4% in number and 12% in weight. The slaughtering of pigs increased by 10% in number and by 11% in weight, as compared to the same period last year.

 

 

 

S druge strane, broj zaklanih ovaca u klaonicama manji je za 19% u broju i u težini, dok je ukupno zaklana perad u manjem padu (2% u broju i 3% u težini).

 

On the other hand, the number of sheep slaughtered in abattoirs decreased by 19% in both number and weight, while the total slaughtered poultry was decreased only a little (2% in number and 3% in weight).

 

 

 

Ukupno zaklana stoka i perad, koja uključuje i domaće klanje na gospodarstvima, u usporedbi s prethodnom godinom bilježi sljedeća kretanja:

 

As compared to the previous year, the total slaughtered livestock and poultry, which also included domestic slaughtering on private family farms, was recorded as follows:

 

 

 

Broj zaklanih goveda manji je za 5%, dok se istodobno bilježi povećanje težine zaklanih grla za 4%. Kod svinja je zabilježen pad broja zaklanih grla za 6%, a težine za 8%.

 

The number of slaughtered cattle decreased by 5%, while at the same time the number of slaughtered head increased by 4%. Regarding pigs, the number of slaughtered head decreased by 6% and weight by 8%.

 

 

 

Broj ukupno zaklanih ovaca  i koza smanjen je za 10%, dok je težina kod ovaca smanjena za 4%, a kod koza za 7%.

 

The total number of both slaughtered sheep and goats decreased by 10%, while the weight of sheep decreased by 4% and of goats by 7%.

 

 

 

Kod ukupno zaklane peradi bilježi se pad broja i težine u istome postotnom iznosu od 5%.

 

Regarding the slaughtered poultry, it was decreased by 5% in both the total number and weight.

 

 

 

Što se tiče bruto domaće proizvodnje, situacija je sljedeća:

Broj zaklanih goveda smanjen je za 7%, dok je ukupna neto težina veća u istome postotnom iznosu. Za ukupno klanje svinja bilježi se smanjenje u broju za 5% i težini za 7%.

 

The number of slaughtered cattle decreased by 7%, while the total net weight increased by the same percentage. The slaughtered pigs were decreased by 5% in number and by 7% in weight.

 

 

 

Broj zaklanih ovaca u padu je za 8%, a neto težina u blagom je padu za 1%. Kod peradi se bilježi smanjenje u broju za 6% i neto težini za 5%. Ukupna domaća proizvodnja kozjeg mesa također je u padu i u pogledu broja (11%) i neto težine (8%).

 

The slaughtered sheep were decreased by 8% in number and by 1% in the net weight. The poultry was decreased by 6% in number and by 5% in the net weight. The total indigenous production of goat meat also decreased both regarding to the number (11%) and net weight (8%).

Godišnji podaci o ukupnom klanju stoke i peradi u klaonicama sumar su redovitih mjesečnih istraživanja klanja stoke i peradi kod pravnih osoba i obrtnika (obrasci PO-52/M i PO-52/M/OBRT).

 

Annual data on the total slaughtering of livestock and poultry in abattoirs are the sum of regular monthly surveys on the slaughtering of livestock and poultry at legal entities and tradesmen (PO-52/M and PO-52/M/OBRT forms).

 

 

 

Podaci ukupnoga godišnjega klanja stoke i peradi dobiveni su, osim preko podataka o klanju stoke i peradi u klaonicama, i kroz redovita godišnja istraživanja broja stoke i stočne proizvodnje kod poslovnih subjekata i na obiteljskim poljoprivrednim gospodarstvima (obrazac PO-51).

 

Data on the total annual slaughtering of livestock and poultry are also obtained, except for data on the slaughtering of livestock and poultry in abattoirs, on regular annual surveys on the number of livestock and livestock production at business entities and on private family farms (PO-51 form).

 

 

 

Istraživanjem klanja stoke i peradi u klaonicama prikupljaju se podaci o broju zaklane stoke po vrstama i kategorijama, njihovoj težini prije klanja (bruto težina), težini obrađenog trupa (neto težina) i podaci o randmanima.

 

This survey serves for collecting data on the number of slaughtered livestock by types and categories, their weight before slaughtering (gross weight), the weight of dressed carcass (net weight) and data on coefficients of utilisation.

 

 

 

Izvještajima o broju stoke i stočnoj proizvodnji prikupljaju se podaci o broju i težini stoke i peradi, bilanci goveda, svinja, ovaca, koza i peradi, proizvodnji mlijeka (kravljega, ovčjega i kozjega), vune i jaja.

 

Data collected on these farms include data on the number and weight of livestock and poultry, balance of cattle, pigs, sheep, goats and poultry, milk production (cows’, sheep’s and goats’), wool and eggs.

 

 

 

Preko podataka o bilancama stoke i peradi prikupljaju se, među ostalim, i podaci o broju zaklane stoke na gospodarstvima i prisilnom klanju kod pravnih osoba.

 

Data on the balance of livestock and poultry also include information on the number of slaughtered livestock on private family farms as well as on compulsory slaughtering at legal entities.

 

 

 

Podaci o uvozu i izvozu stoke preuzimaju se od Odjela statistike robne razmjene s inozemstvom.

 

Data on export and import of livestock are taken over from the External Trade in Goods Statistics Department.

U skladu s procesima prilagodbe statistike stočarstva i stočne proizvodnje europskim statističkim standardima, od 1. siječnja 2010. uvedeno je mjesečno prikupljanje podataka o klanju stoke i peradi u klaonicama umjesto dotadašnjega tromjesečnog prikupljanja podataka.

 

In line with the process of harmonising the livestock production statistics with the European standards, monthly data collection on livestock and poultry slaughtered in abattoirs has been introduced since 1 January 2010 instead of the former quarterly data collection.

 

 

 

Izvještajne jedinice za koje se podnose mjesečni izvještaji o klanju stoke i peradi jesu pravne osobe i njihovi dijelovi te obrtnici koji se bave djelatnošću klanja stoke i peradi. Adresar za pravne osobe i njihove dijelove (PO-52/M) te obrtnike (PO-52/M/OBRT) preuzet je iz Upisnika odobrenih objekata Ministarstva poljoprivrede, ribarstva i ruralnog razvoja, Uprave za veterinarstvo.

 

Reporting units that submit monthly reports on livestock and poultry slaughtering are legal entities, parts thereof and tradesmen engaged in the activity of livestock and poultry slaughtering. The address book for legal entities and parts thereof (PO-52/M form) as well as for tradesmen (PO-52/M/OBRT form) was taken over from the Entry Book of Approved Facilities of the Ministry of Agriculture, Fisheries and Rural Development – Veterinarian Directorate.

 

 

 

Podaci o broju stoke i stočnoj proizvodnji za poslovne subjekte prikupljaju se izvještajima koji se poštom dostavljaju Državnom zavodu za statistiku, dok su podaci za poljoprivredna kućanstva prikupljeni uz pomoć anketara metodom intervjua na odabranom uzorku.

 

Data on business entities were collected on reports submitted to the Croatian Bureau of Statistics by postal service, while data on private family farms were collected by using the interview method on a selected sample.

Neto težina jest težina očišćenog trupa, zaklane stoke i peradi bez kože, krvi, glave (osim kod odojaka i peradi), utrobe, prednjih nogu do koljena i stražnjih nogu do skočnog zgloba.

 

Net weight is the weight of dressed carcass of slaughtered animals without skin and blood, eviscerated and beheaded (not including piglets and poultry), and after removal of the viscera, fore ends and hind legs with knuckle.

 

 

 

Randman zaklane stoke i peradi jest postotni odnos težine zaklane stoke i peradi (neto težina) i težine žive stoke i peradi (bruto težina), a iskazuje se u postocima.

 

Coefficient of utilisation of slaughtered livestock and poultry is a percentage ratio of the weight of the slaughtered cattle and poultry (net weight) and the weight of livestock and live poultry (gross weight), and it is presented in percentage.

 

 

 

Ukupno klanje stoke i peradi obuhvaća svu stoku i perad zaklanu na području Republike Hrvatske bez obzira na podrijetlo. Označava zbroj klanja stoke i peradi u klaonicama i klanja stoke i peradi kod pravnih osoba (prisilno klanje) i na obiteljskim poljoprivrednim gospodarstvima.

 

Total slaughtering of livestock and poultry covers all livestock and poultry slaughtered on the territory of the Republic of Croatia, irrespective of origin. It represents the sum of livestock and poultry slaughtered in abattoirs and livestock and poultry slaughtered at legal entities (compulsory slaughtering) and on private family farms.

 

 

 

Bruto domaća proizvodnja obuhvaća stoku i perad uzgojenu na području Republike Hrvatske. Označava razliku ukupno zaklane stoke i peradi i vanjskotrgovinske bilance (BDP = Ukupno klanje stoke i peradi – u meso preračunana masa živih uvezenih životinja + u meso preračunana masa živih izvezenih životinja).

 

Gross indigenous production covers livestock and poultry bred on the territory of the Republic of Croatia. It represents the difference between the total slaughtered livestock and poultry and the external trade balance (GIP – slaughtered meat production minus the meat equivalent of animals imported alive plus the meat equivalent of animal exported alive).
