Prikupljeno
kravlje mlijeko u 2010. u odnosu na 2009. bilježi smanjenje za 7,6% kao i
kozje mlijeko, (za 0,9%). Istodobno prikupljeno ovčje mlijeko bilježi
povećanje za 1,4%.

In 2010, as compared to 2009, the
collected cows’ milk decreased by 7.6% and goats’ milk by 0.9%, while the
collected ewes’ milk increased, by 1.4%.
|

|
|
|
Količina
cjelovitog mlijeka koju uvoze mljekare u 2010. u odnosu na 2009. povećana
je za 36,7%. Ostali podaci o uvozu i izvozu sirovina koji obavljaju
mljekare zaštićeni su u skladu sa Zakonom o službenoj statistici (NN, br.
103/03. i 75/09.).

The quantity of whole milk imported by
dairies increased in 2010, as compared to 2009, by 36.7%. Other data on the
import and export of raw materials collected by dairies are protected in
line with the Official Statistics Act (NN, Nos 103/03 and 75/09).

Što se
tiče proizvodnje svježih mliječnih proizvoda, u usporedbi s prošlom
godinom, povećanje se bilježi samo kod konzumnog mlijeka (za 2,1%).
Istodobno se bilježi smanjenje proizvodnje mlaćenice za 21,8%, vrhnja za
2,0%, fermentiranih proizvoda i napitaka s mliječnom bazom za 4,4% te
ostalih svježih proizvoda za 9,1%.

Regarding fresh milk products, as
compared to 2009, an increase is recorded only in the production of
drinking milk (by 2.1%). At the same time, the production of buttermilk decreased
by 21.8%, of cream by 2.0%, of fermented products as well as of milk-based
products by 4.4% and of other fresh milk products by 9.1%.

Smanjenje
proizvodnje maslaca i ostalih proizvoda od žutih masnoća iznosi 13,3% u
odnosu na 2009. Ukupna proizvodnja sira u 2010. povećana je za gotovo sve
vrste sireva. Tako se za proizvodnju kravljeg sira bilježi povećanje od
2,6%, te ostalih sireva za 27,8%. Proizvodnja srednje tvrdog sira veća je
za 2,9%, svježeg sira za 8,6% te prerađenog sira za 11,0%. Smanjenje se bilježi
samo u proizvodnji mekanog sira (za 23,2%).

The decrease in the production of butter
and other yellow fat dairy products was 13.3%, as compared to 2009. In 2010, the total cheese production of almost all varieties of cheese increased. Thus, the
production of cows’ cheese increased by 2.6% and of other cheese by 27.8%.
The production of medium-soft cheese increased by 8.6% and of processed
cheese by 11.0%. The only decrease was recorded in the production of soft
cheese (23.2%).

Sadržaj
mliječne masti u prikupljenom kravljem mlijeku bilježi smanjenje za 7,5%
dok u ovčjem mlijeku bilježi povećanje za 3,2% te kod kozjeg mlijeka (za
1,5%).

The milk fat content in cows’ milk
collected decreased by 7.5%, while in ewes’ milk collected it increased by
3.2% and in goats’ milk by 1.5%.

U
pogledu pojedinačnih mliječnih proizvoda, količina mliječne masti u
konzumnom mlijeku manja je za 4,0%, u fermentiranim proizvodima za 0,5% te
u maslacu i ostalim proizvodima od žutih masnoća za 19,5%. Za većinu
ostalih proizvoda također se bilježi smanjenje sadržaja mliječne masti.

Regarding individual dairy products, the
milk fat content in drinking milk decreased by 4.0%, in fermented products
by 0.5% and in butter and other yellow fat dairy products by 19.5%. The
decrease in the milk fat content was also recorded in most other products.

proteina kravljeg mlijeka u glavnim mliječnim proizvodima u porastu je u
konzumnom mlijeku (za 1,8%) te u kravljem siru (za 7,5%), dok je sadržaj
proteina u vrhnju u padu (za 4,3%).

The milk protein content in main dairy
products increased in drinking milk by 1.8% and in cows’ cheese by 7.5%,

Podaci o godišnjoj
proizvodnji mlijeka i mliječnih proizvoda preuzimaju se od Hrvatske
poljoprivredne agencije – Središnjeg laboratorija za kontrolu mlijeka
(SLKM). Na taj se način prikupljaju podaci o količini prikupljenoga
kravljeg, ovčjeg i kozjeg mlijeka, sadržaju mliječne masti i proteina,
proizvodnji mliječnih proizvoda te vanjskoj trgovini mljekara mlijekom i
proizvodima.

Data on
the annual production of milk and dairy products are taken over from the
Croatian Agricultural Agency – the Central Laboratory for Milk Control
(SLKM). The data collected that way refer to the quantity of cows’, ewes’
and goats’ milk collected, milk fat and protein contents, the production of
dairy products from cows’ milk and the foreign dairies’ trade in milk and
dairy products.

Prikupljene podatke SLKM obrađuje i prosljeđuje Državnom zavodu za
statistiku prema unaprijed dogovorenim terminima i obliku prilagođenom za
daljnju obradu.

The
Laboratory processes the collected data and submits them, according to
previously defined deadlines and in suitable form, to the Croatian Bureau
of Statistics for further processing.

U Republici
Hrvatskoj djeluje četrdesetak mljekara za koje SLKM analizira otkupljeno
mlijeko i od kojih prikuplja podatke o proizvodnji. Obuhvaćene su
industrijske i registrirane male mljekare.

are about forty dairies operating in the Republic of Croatia for which the
SLKM makes analysis of purchased milk and from which it collects data on
the production. The coverage includes industrial and registered small dairies.

Raw
milk comprises milk which has not been heated beyond 40°C or undergone any treatment that has an equivalent effect.

Neobrano mlijeko obuhvaća
